Choosing the meat: Pork Shoulder, Tenderloin, or Pork Belly!
The Marinade: 1 tbsp dried oregano, 1 tbsp of fresh oregano, juice of 2-4 lemons, 2-4 grated garlic cloves, olive oil to cover. Refrigerate overnight!
Pita Recipe: 1 cup warm water, 2 1/4 tsp instant yeast 1 packet, 1/2 tsp sugar, 1/4 cup whole wheat flour, 2 Tbsp extra virgin olive oil plus another 1 tsp to oil the bowl, 1 1/2 cups all-purpose flour plus more to dust,, 1 1/2 tsp fine sea salt.
tzatziki sauce recipe: 3/4 English Cucumber, 2 cloves of garlic, 2 cups Greek Yogurt, 1 Tbs Olive Oil, 2-4 Tbs fresh dill. Mix well and refrigerate for 2-4 Hours.
