How to Spatchcock a Thanksgiving Turkey | Homemade Smoked Mac & Cheese from Scratch

Today is our final day of smoking turkey for Thanksgiving! We’ve upped the difficulty little by little each day, and this is our most interesting method yet.

Today we’ll be cutting the spine out of our turkey, so that it can lay flat on our grill while it cooks. One of our favorite parts about this is that it cuts down on the time it takes to cook your bird tremendously.
